Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn-starch
Thickens the sauce as it heats in the liquid, giving it body.
Egg
Adds richness and helps thicken the sauce as its proteins set with heat.
Butter
Adds richness and a smooth, silky mouthfeel.
Sugar
Provides sweetness that balances the tart lemon.
Lemon
Adds acidity and bright citrus aroma from the juice and rind.

The step that matters

Cook the sauce until thickened and the starch is fully cooked. Corn-starch only thickens fully when heated enough for its granules to swell and gelatinise. If it is undercooked, the sauce stays thin and can taste raw and starchy. Stir steadily over the heat and taste to confirm it is cooked through.
