Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the fruit that becomes tender and absorbs the sweet-sour flavour.
Sugar
Adds sweetness and helps balance the sharpness of the vinegar.
Vinegar
Provides acidity that preserves the fruit and gives it a tangy flavour.

The step that matters

Repeating the pour-off and reboil. Each reboil dissolves more sugar and carries acid and flavour into the fruit. Skipping or rushing the daily repeats leaves the peaches less pickled and less evenly flavoured.

Swap the ginger

How well each one fits the dish's main ingredients (peach, sugar, vinegar):

  1. Cinnamonfits better
  2. Peppermintfits about as well
  3. Gingerthe original
  4. Clovefits about as well

Fit is the average pairing score against peach, sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
