Ingredients

Directions

Make the vegetable base

  1. Combine lettuces, onion, parsley, butter, and 1 pint of water in a stewpan. Simmer until tender. Season with salt and pepper.

  2. Strain off the vegetables and set aside.

Finish the soup

  1. Combine two-thirds of the liquid with the soup stock.

  2. Beat the egg yolks with the remaining third of the liquid. Heat gently over low heat.

  3. Just before serving, add the egg mixture and the reserved vegetables to the strained soup.

What each ingredient does

Egg yolks
Thicken the soup gently and add richness when heated slowly without boiling.
Butter
Adds fat and richness, carrying flavour through the vegetables.
Green peas
Add sweetness and body; they are listed but not used in the steps.

The step that matters

Heating the egg mixture. Egg yolks thicken by gentle heat. If the soup gets too hot or boils after the egg is added, the yolks can scramble and curdle, leaving a grainy texture.

Swap the onion

How well each one fits the dish's main ingredients (peas, lettuce, parsley, butter, egg, pepper):

  1. Shallotfits better
  2. Spinachfits better
  3. Asparagusfits better
  4. Onionthe original

Fit is the average pairing score against peas, lettuce, parsley, butter, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
