Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Duck
Provides the main meat, which becomes tender through slow stewing.
Salt pork
Adds fat and savory flavor to the stew as it renders into the pan.
Brown flour
Thickens the stewing liquid into a smooth, body-rich sauce.
Onion
Adds aromatic sweetness and depth as it softens in the stew.

The step that matters

Stew slowly until the duck is tender. Low, gentle heat breaks down the tough connective tissue in duck meat. Boiling hard can toughen the muscle fibers and leave the meat dry, so the pot should stay at a slow simmer for the full time.

Swap the peas

How well each one fits the dish's main ingredients (pork, pepper, sage, onion, flour):

  1. Chestnutfits better
  2. Beansfits better
  3. Black-eyed peafits better
  4. Peasthe original

Fit is the average pairing score against pork, pepper, sage, onion, flour. Candidates are from the same food group and used in at least 100 recipes.
