What each ingredient does

Pea pods
Add flavour and body to the stock, giving the soup its base.
Drippings
Fat that carries flavour and gives the peas a richer, rounder taste.
Peas
Main ingredient that gives the soup its colour, sweet flavour and body.
Soup stock
Liquid base that makes up the soup and is added as it reduces.
Loaf sugar
Adds a little sweetness that balances the vegetal flavour of the peas.

The step that matters

Keep adding soup stock until the peas are tender. Peas need enough liquid to soften fully while simmering. If they dry out or cook too hard, the soup loses its smooth texture and fresh green flavour.

Swap the parsley

How well each one fits the dish's main ingredients (peas, sugar):

  1. Mintfits better
  2. Cinnamonfits better
  3. Gingerfits better
