Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard and whites, whipped stiff, lighten its texture.
Corn starch
Thickens the custard as it heats, giving it a smooth, set body.
Milk
Forms the liquid base of the custard and adds richness and body.
Sherry wine
Adds a sweet, fortified wine flavour to the finished custard.
White granulated sugar
Sweetens the custard and helps stabilise the whipped egg whites.

The step that matters

Cook until it thickens, but do not let it boil. Egg yolks can curdle and turn grainy if overheated, so the custard should be cooked gently until thick and kept below a boil.

Swap the lemon
