Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Duck
Provides the main meat and fat that flavour the stew as it cooks.
Flour
Thickens the butter and pan juices into a smooth, lightly bound sauce.
Butter
Adds richness and flavour to the roux that begins the sauce.
Green peas
Supply the sweet, tender vegetable body of the dish.
Mint
Adds a fresh, aromatic herbal note that lifts the rich duck.

The step that matters

Let it stew slowly until fully cooked, skimming as needed.. Slow, gentle simmering lets the tough duck tissue break down and become tender without drying out. Skimming removes fat and foam that would otherwise make the sauce greasy and cloudy.

Swap the mint

How well each one fits the dish's main ingredients (butter, flour, peas, pepper):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Turmericfits better
  4. Mintthe original

Fit is the average pairing score against butter, flour, peas, pepper. Candidates are from the same food group and used in at least 100 recipes.
