Rice Cream

Ingredients

Directions

Cook the rice and milk

  1. Boil the rice in plenty of water for 10 minutes, then drain.

  2. Add 1 pint of milk and cook in a double boiler for 45 minutes with the lemon rind for flavor.

  3. Remove the lemon peel, then add the soaked gelatine, sugar, and salt.

Chill and set

  1. Place the mixture in a pan of cold water and stir until thoroughly chilled.

  2. Gently fold in the whipped cream without breaking the froth.

  3. Pour into small cups or one large mold and refrigerate until firm.

Serve

  1. Serve with strawberries and whipped cream or golden orange jelly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the chilled mixture so it holds its shape when unmolded or spooned.
Whipped cream
Adds lightness and richness through trapped air and fat.
Raw rice
Thickens the milk as it cooks and gives the dessert its body.
Milk
Forms the creamy base that the rice cooks into.
Sugar
Sweetens the dessert and softens its flavor.

The step that matters

Fold in the whipped cream gently. Whipped cream is a foam held up by trapped air bubbles. Vigorous stirring deflates it, making the dessert dense instead of light. Folding keeps the air intact.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, rice, cream, milk):
