What each ingredient does

Beef suet
Adds fat and richness, keeping the pudding moist as it cooks.
Fresh bread crumbs
Absorb liquid and give the pudding a light, tender body.
Eggs
Bind the mixture together and help it set as it cooks.
Demarara sugar
Adds sweetness and a molasses-like depth of flavor.
Sultana raisins
Provide sweetness, chewy texture and concentrated fruit flavor.
Jamaica rum
Adds aroma and flavor while contributing to the pudding's keeping quality.

The step that matters

Boil the puddings for the full time. Long, steady boiling cooks the eggs and bread crumbs through and sets the dense, moist mixture. Cutting the time short leaves the centre wet and loose.

Swap the black currant

How well each one fits the dish's main ingredients (sugar, raisin, plum, apple, beef, bread, egg):

  1. Figfits better
  2. Pearfits better
  3. Apricotfits better
  4. Black currantthe original

Fit is the average pairing score against sugar, raisin, plum, apple, beef, bread, egg. Candidates are from the same food group and used in at least 100 recipes.
