What each ingredient does

Eggs
Yolks enrich and bind the mixture, while whipped whites lighten it and help it set.
Bread crumbs
Absorb liquid and give the pudding its body and crumbly texture.
Suet
Adds fat that keeps the pudding moist and rich as it cooks.
Brown sugar
Adds sweetness and a molasses note that deepens the flavour.
Muscatel raisins
Provide chewy texture and concentrated sweetness throughout the pudding.
Brandy
Adds aroma and flavour while helping preserve the pudding.

The step that matters

Fold in the beaten egg whites last. Whipped whites hold air that lightens the pudding; overmixing or stirring them in early deflates the foam and leaves a dense result.

Swap the currant

How well each one fits the dish's main ingredients (egg, flour, raisin, sugar, bread, orange, lemon):

  1. Figfits better

Fit is the average pairing score against egg, flour, raisin, sugar, bread, orange, lemon. Candidates are from the same food group and used in at least 100 recipes.
