Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Provides the liquid base and dairy flavour for the custard.
Cream
Adds richness and fat, giving a smoother, creamier texture.
Sugar
Sweetens the mixture and lowers the freezing point, keeping the ice cream softer.
Eggs
Thicken the custard as they heat and help give it a rich structure.
Corn-starch
Thickens the custard when heated, adding body and helping it hold together.

The step that matters

Heat gently until thickened. Eggs can scramble and curdle if the custard gets too hot too fast. Gentle heat lets the eggs and starch thicken it evenly into a smooth custard that freezes creamily.
