Peach Kuchen

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out the Kuchen Dough to ½ inch thickness on a floured board, using minimal flour.

  2. Brush the dough with melted butter.

  3. Sprinkle chopped raisins, citron, almonds, lemon peel, currants, sugar, and cinnamon over half of the dough.

  4. Fold the other half of the dough over and press the edges together.

  5. Roll out slightly and cut into squares, pressing the edges together again.

  6. Place in a buttered tin and brush the top with a mixture of egg yolk and milk.

  7. Sprinkle thickly with sugar and cinnamon, then add chopped almonds and bits of butter.

  8. Let rise until light, then bake in a 400°F (200°C) oven until brown.
