Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and bind the batter, while folded whites add lightness and a tender crumb.
All-purpose flour
Forms the gluten structure that gives the soft paste enough body to roll and hold its shape.
Powdered sugar
Sweetens the batter and dissolves smoothly into the yolks for a fine, even texture.
Cream
Adds fat and moisture, making the dough richer and more tender.
Lard
Conducts heat for frying and gives the fritters a crisp, golden surface.

The step that matters

Frying the circles in hot lard. If the lard is not hot enough, the fritters absorb oil and turn greasy instead of puffing. Too hot, and the outside browns before the centre cooks through.
