Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the shells

  1. Boil the butter and water together in a saucepan.

  2. Stir in the flour while boiling until combined.

  3. Let the mixture cool.

  4. Add 5 well-beaten eggs to the mixture and mix well.

  5. Drop spoonfuls of the mixture onto baking sheets.

  6. Bake in a preheated oven at 400°F (200°C) until golden.

Make the filling

  1. Boil the milk for the filling.

  2. Stir in the sugar and corn starch.

  3. Add 2 beaten eggs.

  4. Mix until thickened.

  5. Flavor with lemon or vanilla.

  6. Cool before filling the puffs.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the puff shells together as they bake.
Butter
Adds fat and richness, and melts into the boiling water to start the dough.
Eggs
Add structure and help the shells puff and set as they bake.
Corn starch
Thickens the filling so it becomes smooth and holds its shape.
Milk
Forms the liquid base of the filling and adds richness.
Sugar
Adds sweetness to the filling.

The step that matters

Bake until golden. Shells need a fully dried, golden interior to hold their shape. Underbaked puffs can collapse as they cool, leaving them soggy inside.
