Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness to the pot, helping the onions brown and carrying flavour.
Onions
Browning them builds deep, sweet savoury flavour that colours the finished soup.
Split peas
Break down during long simmering, thickening the water into a smooth, hearty body.

The step that matters

Browning the onions. Onions must brown, not just soften, because the caramelised sugars and browned flavour carry through the whole soup. Stirring constantly prevents scorching and bitter notes.

Swap the peas

How well each one fits the dish's main ingredients (butter, onion, coffee):

  1. Cocoafits better
  2. Peanutfits better
  3. Hazelnutfits better
  4. Peasthe original

Fit is the average pairing score against butter, onion, coffee. Candidates are from the same food group and used in at least 100 recipes.
