Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the bulk and structure of the pudding, layered with the apple mixture.
Apples
Provide moisture, tartness and a soft texture throughout the pudding.
Egg yolks
Enrich the mixture and help it set as it bakes.
Egg whites
Whipped into a light, airy topping that browns in the oven.
Sugar
Adds sweetness and helps the top turn golden brown.
Lemon juice
Adds acidity that brightens the sweetness of the apples and sugar.

The step that matters

Whipping the egg whites until stiff. Whipping unfolds the egg white proteins and traps air in them. Under-whipped whites deflate and weep, while over-whipped whites turn grainy and collapse in the oven.

Swap the apple

How well each one fits the dish's main ingredients (rice, egg, sugar, nutmeg, wine, lemon):

  1. Orangefits better
  2. Limefits better
  3. Figfits better
  4. Applethe original

Fit is the average pairing score against rice, egg, sugar, nutmeg, wine, lemon. Candidates are from the same food group and used in at least 100 recipes.
