Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Indian meal
Cornmeal thickens the milk as it cooks, giving the pudding its body and grainy texture.
Milk
Liquid that hydrates the cornmeal, creating a soft custard-like set as it bakes.
Molasses
Adds sweetness, dark color, and a deep caramel-like flavor.
Butter
Adds fat for richness and a smoother mouthfeel.

The step that matters

Stirring in the cold water just before baking. Cold water cools the hot batter slightly so it does not start setting before it reaches the oven, and keeps the texture loose and even while it bakes.

Swap the ginger

How well each one fits the dish's main ingredients (butter, molasses, milk):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Clovefits about as well
