Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites separately until stiff.

Make the custard

  1. In a bowl, combine the milk, bread crumbs, grated lemon rind, and white sugar, then mix well and pour the mixture into a baking dish.

  2. Bake until set, then let it cool.

Top and brown

  1. Top with your choice of fruit.

  2. Spread the beaten egg whites over the fruit.

  3. Return to the oven to brown the top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten whites trap air into a stiff foam that forms the light topping and browns in the oven.
Milk
Provides the liquid that sets with the egg into a soft, custard-like base.
Bread crumbs
Soak up the milk and give the pudding body and a tender crumb.
White sugar
Adds sweetness and helps the topping brown.
Lemon rind
Adds a bright citrus aroma to the custard.

The step that matters

Beating and spreading the egg whites. Whites must be beaten until stiff so they hold their shape and form a foam. Any fat or yolk left in the bowl prevents this, and a loose foam will weep or brown unevenly.
