What each ingredient does

Pippin apples
Provide the main body of the dessert, softening as they cook while holding their shape.
Rice
Wrapped around the apple, it helps shape and protect the fruit during boiling.
Butter
Enriches the sauce, adding richness and a smooth, silky texture.
Loaf sugar
Sweetens the sauce, balancing the acidity of the wine and fruit.

The step that matters

Tie the rice cloth securely. If the cloth is loose, the rice can leak or unwrap during the long boil, so the apple loses its shape and the filling escapes into the water.

Swap the apple
