Lemon Meringue Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding base

  1. Soak the bread crumbs in the milk.

  2. Add the beaten egg yolks, sugar, and butter, mixing until creamy.

  3. Stir in the lemon juice and grated rind.

Bake and top with meringue

  1. Bake in a buttered dish at 350°F (175°C) until firm and slightly browned.

  2. Remove from the oven and cover with meringue made from whipped egg whites, 3 tablespoons powdered sugar, and a little lemon juice.

  3. Brown the meringue slightly, sift powdered sugar over it, and serve cold.

What each ingredient does

Eggs
Egg yolks thicken the custard base, while whipped whites form the meringue topping.
Bread crumbs
Soaked in milk, they add body and help the pudding set into a soft, tender texture.
Milk
Provides the liquid that forms the pudding base and keeps it moist during baking.
Butter
Adds richness and a smooth, creamy texture to the pudding base.
White sugar
Sweetens the pudding and helps create a smooth, creamy base.
Lemon
Juice and rind add acidity and bright lemon aroma to the pudding and meringue.

The step that matters

Bake until firm, then top with meringue. Underbaking leaves the egg-thickened base loose, so it may not hold its shape or support the meringue. Baking until just firm and lightly browned sets the custard without curdling it.
