Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Old-fashioned Loaf Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the sponge

  1. Scald the milk and cool it to body temperature.

  2. Add the yeast to the milk.

  3. In a large bowl, mix the flour with the butter and sugar.

  4. Combine the milk mixture with the flour mixture and let it rise.

  5. Set the sponge at night.

Mix and bake

  1. Add the other ingredients in the morning.

  2. Let the mixture stand until light, then pour it into baking pans.

  3. Let it rise again and bake in a moderate oven at 350°F (175°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure that holds the cake together as it bakes.
Eggs
Add structure and richness, helping the crumb set when baked.
Butter
Adds fat for tenderness and a richer, softer crumb.
Molasses
Adds moisture, dark color and a deep sweetness.
Yeast
Produces gas during the rise, lightening the dough before baking.

The step that matters

Let the mixture stand until light. Yeast needs enough time to raise the batter before baking. Under-proofed dough bakes up dense, while the rise must be complete for a light loaf.
