Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat oven to 350°F (175°C).

  2. Cream butter and powdered sugar together.

  3. Add yolks of eggs and mix well.

  4. Beat egg whites until stiff, then fold into mixture.

Make the batter

  1. Add sweet milk, reserving about 1 tablespoon.

  2. Mix in cream of tartar, flour, and spices.

  3. Dissolve baking soda in reserved milk and add to batter.

  4. If using sour milk, omit cream of tartar and use baking soda only.

Bake

  1. Pour batter into greased cake pan and bake until toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air for lift, while yolks add richness and structure to the crumb.
Butter
Creamed with sugar, it traps air and adds fat for a tender, moist texture.
Flour
Provides the starch and gluten structure that holds the cake's crumb together as it bakes.
Powdered sugar
Creamed with butter, it adds sweetness and helps create a fine, even crumb.
Baking soda
Reacts with acidic ingredients to release gas, helping the cake rise.
Cream of tartar
Acidic ingredient that stabilizes the egg foam and helps the leavening react.

The step that matters

Folding in the stiff egg whites. Stiffly beaten whites hold the air that lifts the cake. Overmixing when folding knocks that air out, leaving a dense, flat result.

Swap the clove

How well each one fits the dish's main ingredients (egg, sugar, flour, milk, butter, cream, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits about as well
  4. Clovethe original

Fit is the average pairing score against egg, sugar, flour, milk, butter, cream, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
