Lemon Custard

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the custard

  1. Beat the egg yolks with the sugar until smooth.

  2. Beat the egg whites until stiff peaks form, then gently fold them into the yolk mixture.

  3. Grate the lemon peel and squeeze in the juice from the lemons.

  4. Add the small piece of butter and mix well.

Bake

  1. Pour the mixture into a baking dish and bake until set, about 30-40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg yolks set the custard and whites, folded in, lighten its texture.
Sugar
Sweetens the custard and helps the yolks blend smoothly.
Lemons
Juice and peel add acidity and bright lemon aroma.
Butter
Adds richness and a silky mouthfeel to the custard.

The step that matters

Folding the egg whites. Folding gently keeps the whipped whites airy; stirring hard deflates them, leaving a denser, less light custard.
