What each ingredient does

Buttermilk
Adds moisture and acidity that reacts with the baking soda to help the cake rise.
Baking soda
Reacts with the acidic buttermilk to produce gas that lifts the batter.
Flour
Provides structure as it sets during baking, so the batter is stiffened to a firm texture.
Sugar
Sweetens the cake and contributes to browning and a tender crumb.
Raisins
Add chewy pockets of sweetness distributed through the cake.

The step that matters

Gradually add flour until the batter is stiff. Adding flour in small amounts lets you control the batter's consistency. Too much flour at once can make the cake dense and tough, since flour proteins develop structure when mixed and hydrated.

Swap the clove

How well each one fits the dish's main ingredients (sugar, cinnamon, nutmeg, buttermilk, raisin, flour):

  1. Cardamomfits better
  2. Allspicefits about as well
  3. Clovethe original
  4. Gingerfits less well

Fit is the average pairing score against sugar, cinnamon, nutmeg, buttermilk, raisin, flour. Candidates are from the same food group and used in at least 100 recipes.
