The Queen of Puddings

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Preheat the oven to 350°F (175°C).

  2. Combine bread crumbs, sweet milk, sugar, egg yolks, grated lemon rind, and butter. Mix well.

  3. Pour the mixture into a baking dish.

  4. Bake until set.

Make the meringue and finish

  1. Beat the egg whites to stiff peaks.

  2. Gradually add 1 cup sugar and lemon juice.

  3. Spread a layer of acid jelly on top.

  4. Add the meringue.

  5. Return to the oven to brown the meringue slightly.

  6. Serve with cold cream.

What each ingredient does

Bread crumbs
Provide the bulk that soaks up milk and sets into a soft, tender base.
Egg yolks
Thicken the custard as they set, giving it a rich, smooth structure.
Egg whites
Whipped into stiff peaks, they form the light, airy meringue topping.
Sweet milk
Supplies the liquid that moistens the crumbs and helps the custard set.
Sugar
Sweetens the custard and, dissolved into the whites, stabilises the meringue.

The step that matters

Brown the meringue only slightly. Meringue is mostly sugar and egg white, so it browns quickly in the oven. Too much heat or time can scorch the topping and make it weep or toughen, while the custard beneath stays underbaked.

  4. Lemonthe original

Fit is the average pairing score against bread, milk, sugar, egg, butter, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
