Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peas
Form the pulp that gives the soup its body and thick texture.
Butter
Adds richness and fat, carrying flavour through the soup.
Anchovies
Add a deep savoury, salty note that rounds out the green flavours.
Loaf sugar
Adds a touch of sweetness to balance the savoury and herbal notes.

The step that matters

Stew the mixture until tender. Cooking the herbs, beetroot and spinach gently until soft releases their flavour and colour evenly into the butter. Rushing this leaves them raw and fibrous, which dulls the soup's taste and texture.

Swap the mint

How well each one fits the dish's main ingredients (peas, butter, pepper, parsley, beetroot, spinach, sugar):

  1. Tarragonfits better
  2. Capersfits better
  3. Thymefits better
