Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the tender, delicate meat that is the centrepiece of the stew.
Bacon
Adds fat and smoky, savoury flavour as it renders into the stew.
Stock
Supplies liquid that gently cooks the sweetbreads and carries flavour.

The step that matters

Cook gently on low heat. Sweetbreads are delicate and toughen or dry out if boiled or cooked too hot. Gentle, low heat in a little liquid keeps them tender and moist.

Swap the peas

How well each one fits the dish's main ingredients (beans, asparagus):

  1. Lima beansfits better
  2. Lentilsfits better
  3. Sesamefits better
  4. Peasthe original

Fit is the average pairing score against beans, asparagus. Candidates are from the same food group and used in at least 100 recipes.
