Spice Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the brown sugar and butter.

  2. Add the egg yolks and mix well.

  3. Stir in the ground cloves, allspice, cinnamon, ginger, and grated nutmeg.

  4. In a separate bowl, combine the sour milk and baking soda, then add to the mixture.

  5. Mix until well combined and pour into a greased baking pan.

Bake

  1. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.

What each ingredient does

Egg yolks
Add richness and help bind the batter for a tender crumb.
Baking soda
Reacts with the sour milk to produce gas that lifts the cake.
Sour milk
Its acidity activates the baking soda and adds moisture.
Brown sugar
Adds sweetness, moisture, and caramel notes that aid browning.
Butter
Adds fat for tenderness and flavor, and helps trap air when creamed.

Swap the ginger

How well each one fits the dish's main ingredients (sugar, butter, egg, clove, allspice, cinnamon, nutmeg):
