Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the filling once it is boiled with the water.
Egg
Adds richness and helps the filling set when baked.
Butter
Adds fat for a smoother, richer texture.
Sugar
Sweetens the filling and balances the lemon's tartness.
Lemon juice
Provides the acidity and bright flavour of the pie.

The step that matters

Cooling before adding the egg. Adding beaten egg to a very hot mixture can scramble it into lumps. Letting it cool slightly lets the egg blend in smoothly and set evenly in the crust.
