Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the butter and dark brown sugar.

  2. Stir in the molasses and coffee until well combined.

  3. Add the eggs, currants, raisins, citron, and whisky, mixing thoroughly.

  4. In a separate bowl, combine the flour, cloves, cinnamon, and baking soda or baking powder.

  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Bake

  1. Pour the batter into a greased baking pan and bake for about 45-50 minutes or until a toothpick comes out clean.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Butter and flour barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and give the cake a tender, rich crumb.
Dark brown sugar
Adds sweetness and moisture, and its molasses notes deepen the cake's flavor.
Orleans molasses
Adds dark color, moisture and a robust, slightly bitter sweetness.
All-purpose flour
Forms the structure of the cake as its proteins set during baking.
Eggs
Bind the batter and help provide structure and richness.
Baking soda or baking powder
Leavens the batter so it rises and becomes light as it bakes.

The step that matters

Gradually add the dry ingredients to the wet mixture, mixing until just combined.. Overmixing once flour meets liquid develops gluten, which makes the cake tough. Mixing only until combined keeps the crumb tender.

Swap the currant

How well each one fits the dish's main ingredients (butter, sugar, molasses, coffee, flour, egg, raisin):

  1. Vanillafits better
  2. Figfits better
  3. Applefits about as well
  4. Currantthe original

Fit is the average pairing score against butter, sugar, molasses, coffee, flour, egg, raisin. Candidates are from the same food group and used in at least 100 recipes.
