Black Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and sugar.

  3. Add the egg yolks and mix well.

  4. Stir in the milk, followed by the baking powder and spices.

  5. Gradually add the browned flour until well combined.

  6. Fold in the raisins, currants, and citron.

Bake

  1. Pour the batter into a greased cake pan.

  2. Bake for about 1.5 to 2 hours, or until a toothpick comes out clean.

What each ingredient does

Egg yolks
Add richness and structure, helping bind the batter and give a tender crumb.
Butter
Adds fat for a tender texture and rich flavour.
Sugar
Sweetens the cake and helps create a tender crumb when creamed with butter.
Browned flour
Provides the structure of the cake and a toasted, caramel-like flavour.
Baking powder
Produces gas that leavens the batter so it rises during baking.
Raisins
Add chewy sweetness and moisture to the finished cake.

The step that matters

Bake until a toothpick comes out clean. The cake is dense and fruit-heavy, so underbaking leaves a wet, gummy centre, while overbaking dries it out. Testing the centre with a toothpick confirms the crumb is set.

Swap the currant

How well each one fits the dish's main ingredients (egg, butter, sugar, milk, raisin, cinnamon, allspice):

  1. Vanillafits better
  2. Figfits better
  3. Lemonfits better
  4. Currantthe original

Fit is the average pairing score against egg, butter, sugar, milk, raisin, cinnamon, allspice. Candidates are from the same food group and used in at least 100 recipes.
