Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and brown sugar until light.

  2. Add the eggs two at a time, beating for 5 minutes between each addition.

  3. Sift the flour with the baking powder and add it to the mixture along with the huckleberries and extracts.

  4. Mix until combined into a batter.

Bake

  1. Pour into a paper-lined cake tin and bake at 400°F (200°C) for 50 minutes.

What each ingredient does

Butter
Creams with the sugar to trap air, giving the cake a light, tender crumb and rich flavour.
Brown sugar
Creams with the butter for sweetness and moisture, and adds a molasses-like depth.
Eggs
Add structure and richness, and their proteins help set the cake as it bakes.
Flour
Forms the main structure of the cake batter once the proteins set in the oven.
Baking powder
Releases gas in the batter during baking, helping the cake rise and become airy.
Huckleberries
Add moisture, tartness and colour that run through the crumb as the cake bakes.

The step that matters

Adding the eggs two at a time. Eggs added too quickly can fail to emulsify into the creamed butter and sugar, causing curdling and a coarser texture. Beating each addition fully keeps the batter smooth so it traps air evenly.

Swap the clove

How well each one fits the dish's main ingredients (butter, sugar, egg, flour, cinnamon, allspice, milk):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Clovethe original
  4. Gingerfits less well

Fit is the average pairing score against butter, sugar, egg, flour, cinnamon, allspice, milk. Candidates are from the same food group and used in at least 100 recipes.
