Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the sugar and butter until light and fluffy.

  3. Add the sour milk and mix well.

  4. In a separate bowl, combine the flour, baking soda, cinnamon, and cloves.

  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  6. Fold in the raisins.

  7. Beat the eggs and then mix them into the batter.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-35 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air and add richness and tenderness to the crumb.
Flour
Provides the structure that sets the cake as the batter bakes.
Eggs
Add structure and binding, helping the cake set and hold its rise.
Baking soda
Reacts with the acidic sour milk to produce gas that lifts the cake.
Sour milk
Adds moisture and acidity that activates the baking soda and tenderizes the crumb.
Sugar
Sweetens the cake and helps create a soft, tender texture when creamed.

The step that matters

Stirring the dry ingredients into the wet mixture. Overmixing once flour is added develops gluten, which makes the cake tough and dense. Stirring only until just combined keeps the crumb tender.

Swap the clove

How well each one fits the dish's main ingredients (sugar, butter, milk, flour, raisin, cinnamon, egg):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Clovethe original
  4. Allspicefits about as well

Fit is the average pairing score against sugar, butter, milk, flour, raisin, cinnamon, egg. Candidates are from the same food group and used in at least 100 recipes.
