Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Sift together the graham flour, white flour, baking soda, baking powder, cinnamon, mace, and salt.

  2. In a large bowl, mix in the sugar, molasses, and milk until well combined.

  3. Add the sifted dry ingredients to the wet mixture and stir until fully incorporated.

Bake

  1. Pour the batter into a greased baking pan.

  2. Bake in a slow oven at 300°F (150°C) for 1½ hours.

What each ingredient does

Graham flour
Gives the cake its coarse, hearty texture and nutty flavour.
White flour
Provides the gluten structure that holds the cake together.
Baking soda
Reacts with the acidic molasses to produce gas that lifts the batter.
Baking powder
Adds additional lift so the cake rises evenly in the oven.
Molasses
Adds moisture, dark colour, and a deep, slightly acidic sweetness.
Sugar
Sweetens the cake and helps it brown and stay moist.
