Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the cake together as it bakes.
Egg yolk
Adds richness and helps bind the batter for a tender crumb.
Molasses
Adds moisture, dark color, and deep sweetness to the cake.
Butter
Adds fat for a softer texture and rich flavor.
Raisins
Add pockets of chewy sweetness throughout the cake.

The step that matters

Bake until a toothpick comes out clean. Molasses batters are dense and moist, so underbaking leaves a gummy center while overbaking dries the crumb. A toothpick test shows when the center has set.

Swap the clove

How well each one fits the dish's main ingredients (flour, egg, molasses, sugar, raisin, butter, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Allspicefits about as well
  4. Clovethe original

Fit is the average pairing score against flour, egg, molasses, sugar, raisin, butter, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
