Baked Gooseberry Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pulp

  1. Remove the tops and tails from 2 baskets of gooseberries, wash them well, and place in a double boiler.

  2. Cook until soft and pulpy, then pass through a coarse sieve to measure the pulp.

Make and bake the pudding

  1. Beat the eggs and mix in the butter, bread crumbs, and sugar to taste.

  2. Combine all ingredients well, pour into a buttered baking dish, and bake at 350°F (175°C) for about 40 minutes.

  3. Prepare a good meringue, spread it over the pudding, and brown lightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gooseberry pulp
Provides the main fruit flavour and moisture, with tartness that balances the sugar.
Eggs
Bind the mixture and set it into a soft, custard-like pudding when baked.
Bread crumbs
Add body and absorb liquid, giving the pudding a tender, spoonable structure.
Butter
Adds richness and fat, softening the texture and carrying flavour.

The step that matters

Browning the meringue. Meringue can brown unevenly or weep if overbaked or underbaked. Light browning sets its surface while keeping the pudding beneath moist and tender.
