Larded Saddle of Venison

Ingredients

Directions

  1. Trim and cut the saddle of venison shorter than usual.

  2. Lard the venison as desired.

  3. Carve the venison into slices, cutting downward through both fat and lean.

  4. Prepare a garnish of string beans, small cups of turnips filled with green peas, or stuffed artichoke bottoms, and truffles.

  5. Serve the venison very hot.

Recipe from a historical cookbook (Internet Archive).

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
