What each ingredient does

Peaches
Provide the fruit that is softened and flavoured by the pickling liquid.
Vinegar
Acidity that preserves the peaches and gives the pickle its sharp flavour.
Mustard seed
Adds a sharp, pungent flavour to the pickling liquid.
White pepper
Adds warm, earthy spice to the pickling liquid.
Ginger
Adds aromatic warmth to the pickling liquid.

The step that matters

Draining the peaches before pickling. Peaches that stay wet from the brine dilute the boiling pickle and can weaken its preserving effect, so draining them for several hours helps the vinegar penetrate and keeps the pickle's flavour strong.

Swap the white pepper

How well each one fits the dish's main ingredients (peach, egg, vinegar, ginger, mace, mustard):

  1. Allspicefits better
  2. Cinnamonfits better
