Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the fruit that softens and absorbs the pickling flavours over time.
Vinegar
Adds sharp acidity that gives the pickle its tang and helps preserve the fruit.
Mustard seed
Adds a sharp, pungent flavour to the pickle.
Whole white pepper
Adds warm, sharp spice that flavours the pickling liquid.

The step that matters

Draining the peaches thoroughly. Water left on the peaches dilutes the vinegar. A weaker, more watery pickle has less acidity to preserve the fruit and flavour it evenly.

Swap the white pepper

How well each one fits the dish's main ingredients (peach, egg, vinegar, ginger, mace, mustard):
