  1. Scald the milk in a saucepan.

  2. Stir in the Indian meal, salt, molasses (or sugar), and ginger (or cinnamon). Mix well until combined.

What each ingredient does

Indian meal
Cornmeal thickens the milk as it bakes, setting the pudding into a soft, spoonable custard.
Skimmed milk
Provides the liquid base that the cornmeal thickens and the bake sets.
Molasses
Adds sweetness, dark color and a rich flavor as it caramelizes slowly in the oven.
Ginger
Adds warm, spicy aroma that flavors the pudding throughout.

The step that matters

Scald the milk before adding the meal. Scalding heats the milk so the cornmeal can hydrate and thicken evenly when stirred in, reducing lumps and uneven setting during the long bake.

Swap the ginger

How well each one fits the dish's main ingredients (milk, molasses):

  1. Cinnamonfits better
  2. Clovefits about as well
  3. Gingerthe original
  4. Allspicefits about as well

Fit is the average pairing score against milk, molasses. Candidates are from the same food group and used in at least 100 recipes.
