Peach Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Slice the peaches.

  3. Place the sliced peaches in a pudding dish.

  4. Add a small piece of butter.

Make the custard

  1. In a saucepan, combine the egg yolks, corn starch, sweet milk, and sugar.

  2. Heat the mixture until it comes to a boil.

  3. Pour the mixture over the peaches in the dish.

  4. Bake in the preheated oven until set.

Top and brown

  1. Beat the egg whites to a stiff froth.

  2. Sweeten the beaten egg whites.

  3. Pour the sweetened egg whites over the top of the pudding.

  4. Return to the oven and brown the top.

  5. Serve warm or cold.

What each ingredient does

Peaches
Provide the fruit flavor and moisture that soften the pudding as it bakes.
Egg yolks
Set the custard and add richness to the pudding.
Egg whites
Whipped into a light topping that puffs and browns in the oven.
Corn starch
Thickens the custard so it holds its shape when cooked.
Sweet milk
Forms the liquid base of the custard and adds creaminess.
Sugar
Adds sweetness to the custard and the egg white topping.

The step that matters

Bringing the custard to a boil. Cornstarch only thickens fully once the mixture reaches a boil. If it stays below boiling, the custard remains thin and can leave the pudding runny after baking.
