Sweet-breads

Ingredients

Directions

  1. Soak the sweetbreads in cold water for 1 hour, changing the water twice.

  2. Boil the sweetbreads in water for 10 minutes until firm, then place them in cold water until needed.

  3. In a saucepan, cover the sweetbreads with stock and simmer for nearly 1 hour.

  4. Remove the sweetbreads and place them on a hot dish.

  5. Take the gravy off the heat, then gradually stir in the egg yolk and cream.

  6. Heat the sauce until it thickens, but do not let it boil.

  7. Before serving, add the lemon juice and pour the sauce over the sweetbreads.

  8. Serve with a dish of green peas.
