What each ingredient does

Sweetbreads
Form the main body of the dish, becoming tender when cooked gently in acidulated water.
Butter
Enriches the sauce and carries flavour as the base for the roux.
Flour
Thickens the milk into a smooth white sauce when cooked with butter.
Milk
Forms the liquid of the cream sauce, giving it body and richness.
Mushrooms
Add earthy flavour and a soft, moist texture to the creamed mixture.

The step that matters

Gradually add the milk while stirring. Adding milk slowly to the butter and flour keeps the roux smooth; adding it all at once can leave lumps that the sauce cannot easily lose.

Swap the peas

How well each one fits the dish's main ingredients (lemon, mushroom, butter, flour, milk, pepper):

  1. Chickpeafits better
  2. Chestnutfits better
  3. Almondfits better
  4. Peasthe original

Fit is the average pairing score against lemon, mushroom, butter, flour, milk, pepper. Candidates are from the same food group and used in at least 100 recipes.
