Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. In a basin over water, mix the lemon juice and rind, sugar, water, corn starch (or flour), and beaten egg yolks.

  2. Cook the mixture until thickened.

Bake and brown

  1. Line a pie plate with the crust, pour in the mixture, and bake until the crust is done at 350°F (175°C).

  2. Whip the egg whites to a stiff froth, then gradually add 2 tablespoons of sugar.

  3. Spread the whipped egg whites over the pie and brown in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the filling and enrich its custard texture.
Corn starch or flour
Thickens the lemon mixture as it cooks.
Egg whites
Whipped into a stiff foam that forms the browned topping.
Sugar
Sweetens the filling and helps stabilise the whipped egg white topping.
Lemon juice and rind
Provides acidity and bright lemon aroma to balance the sweetness.

The step that matters

Cook the filling until thickened. The starch and egg yolks must be heated enough to thicken the filling; undercooked starch stays runny and the pie will not set properly when cooled.
