Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the juice and flavour that give the sherbet its tart, bright taste.
Sugar
Sweetens the mixture and balances the lemon's acidity.
Fresh cream
Adds fat for a smoother, richer texture.
Egg whites
Beaten in to add air, giving the frozen dessert a lighter body.

The step that matters

Pouring in the cream and beaten egg whites after partial freezing. If the base is not partly frozen first, the cream and whites can separate or deflate and the sherbet will not hold its airy, smooth texture.

Swap the lemon
