What each ingredient does

Rice
Its starch dissolves into the cooking water and thickens into a firm, jelly-like body as it cools.
Sugar
Adds sweetness and helps give the jelly its body and a smooth, glossy texture.
Lemon peel
Adds bright citrus aroma and a light note that balances the sweetness.

The step that matters

Set aside to cool completely. The rice starch thickens and firms as the liquid cools, so the jelly needs to cool fully before it can set properly. Moving or chilling it too early can leave it soft or loose.

Swap the lemon

How well each one fits the dish's main ingredients (rice, sugar):

  1. Vanillafits better
  2. Coconutfits better
  3. Raisinfits better

Fit is the average pairing score against rice, sugar. Candidates are from the same food group and used in at least 100 recipes.
