What each ingredient does

Whortleberries
Provide the main fruit flavour and juice that soaks into the bread.
Raspberries
Add sweet-tart flavour and juice that softens the bread layers.
Blackberries
Contribute body, deep colour and tart flavour to the stewed fruit.
Currants
Add bright acidity that balances the sweetness of the brown sugar.
Brown sugar
Sweetens the fruit and helps it break down into a soft, syrupy mixture.
Brick loaf of bread
Forms the structure of the pudding and absorbs the fruit juice as it rests.

The step that matters

Letting the pudding sit for three to four hours. Resting lets the bread absorb the fruit juices evenly and firm into a sliceable set. Cutting too early leaves dry patches and a loose, soggy center.

Swap the currant

How well each one fits the dish's main ingredients (sugar, bread, butter, cream):

  1. Vanillafits better
  2. Figfits better
  3. Raspberryfits better
  4. Currantthe original

Fit is the average pairing score against sugar, bread, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
