Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Soak the bread

  1. Boil the milk and pour it over the stale bread.

  2. Let the bread soak for 1 to 2 hours.

  3. Rub the soaked bread fine with your hands.

Mix and bake

  1. Beat the eggs and add them to the bread mixture.

  2. Stir in the cinnamon, sugar, and butter or suet.

  3. Bake in a preheated oven at 350°F (175°C) for 2 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale bread
Forms the body of the pudding and soaks up the milk to become soft.
Milk
Softens the bread and provides moisture that keeps the pudding tender while baking.
Eggs
Bind the mixture and set during baking to give the pudding its structure.
Sugar
Adds sweetness and helps the top brown during baking.
Butter or chopped suet
Adds fat, which gives the pudding richness and a softer texture.

The step that matters

Rubbing the soaked bread fine. Breaking the bread into a fine, even crumb lets it blend smoothly with the milk and eggs. Large dry lumps stay firm and do not set evenly in the custard.

Swap the cinnamon

How well each one fits the dish's main ingredients (bread, milk, egg, sugar, butter):

  1. Cinnamonthe original
  2. Nutmegfits about as well
  3. Parsleyfits less well
  4. Capersfits less well

Fit is the average pairing score against bread, milk, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
