What each ingredient does

Whortleberries
Provide the main fruit body and juice that soaks into the bread.
Raspberries
Add tart flavor and soft texture to the fruit layers.
Blackberries
Add deep fruit flavor and juice that moistens the bread.
Currants
Add sharp acidity that balances the sweetness of the fruit.
Brown sugar
Sweetens the fruit and helps it stew into a soft, syrupy mixture.
Bread
Forms the layers that absorb the fruit juice and hold the dish together.

The step that matters

Top with the remaining fruit and let it stand for 3 to 4 hours. Bread needs time to soak up the fruit juices evenly; resting lets the layers soften and set, so the dish is not dry in some spots and soggy in others.

Swap the currant

How well each one fits the dish's main ingredients (sugar, bread, butter, cream):

  1. Vanillafits better
  2. Figfits better
  3. Raspberryfits better
  4. Currantthe original
