Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Layer the pudding

  1. Butter a pudding dish and add a layer of grated bread, about ½ inch thick.

  2. Add small bits of butter on top of the bread layer.

  3. Layer the chopped apples, sprinkle with sugar and grated lemon peel.

  4. Add another layer of grated bread on top.

  5. Repeat the layers until the dish is full, finishing with grated bread.

  6. Pour 1 cup of cold water over the layers.

Bake

  1. Bake for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour apples
Provide the main fruit flavour and tartness that balances the sugar and bread.
Grated bread
Forms the soft layers that absorb the apple juices and water as the pudding bakes.
Butter
Adds richness and fat that carries flavour and helps the top brown lightly.
Sugar
Adds sweetness and helps the apples caramelise slightly in the oven.
Cold water
Adds moisture that softens the bread as the layers bake.

The step that matters

Pour 1 cup of cold water over the layers. The water must soak into the bread layers before baking; if the dish is too dry the bread stays firm, and if it is poured too early the bread can turn soggy before the heat sets the structure.

Swap the lemon

How well each one fits the dish's main ingredients (apple, butter, bread, sugar):

  1. Figfits better
  2. Pearfits better
  3. Vanillafits better
  4. Lemonthe original

Fit is the average pairing score against apple, butter, bread, sugar. Candidates are from the same food group and used in at least 100 recipes.
